China Yellow Sun

Yellow tea, also known as huángchá in Chinese, is a lightly fermented tea unique to China. As a rare and precious variety of tea, it has a  pleasant mellow taste and known health benefits such as anti-oxidation, anti-inflammation and anti-cancer properties. It is difficult to find outside of China, making it a truly delightful rare tea. 

Yellow tea is similar to green tea in many ways. The initial production process of both teas is the same, but the production of yellow tea requires additional steps. A unique procedure called "sealed yellowing" is always involved in yellow tea processing to increase the oxidation level and remove the characteristic grassy smell associated with green tea while still preserving its health benefits. 

The young leaves are harvested from the tea plant, withered, rolled, and dried to prevent oxidation. During the drying process, the yellow tea leaves are encased and steamed.

This drying process is slower than the method used for producing green tea. The result is a tea that offers a mellower flavor than that of green tea. The leaves also turn a light yellow color, lending to the name of this tea. 

- Yellow Tea - 

A yellow tea from the region of Huang Shan (“Yellow Mountain”) in the Chinese province Anhui with a large, wiry leaf. Produced after the traditional Chinese method this tea has a distinct flavour with natural sweetness and a hint of nuts and bread.

Steeping Instructions:

Serving Size: 2 gr / 1tbs - 8 oz water

Temperature Water: 160 F - 170 F

Steep Time: 2 minutes

We encourage you to experiment with the quantity of tea leaves and the length of the steep time to find your desired brew strength. Varying the water temperature isn't recommended, as water that is too hot will over-extract the bitter components of tea, while water that is too cool might not fully draw out the aromas and flavors of the tea.
