Caturra is a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil sometime between 1915 and 1918.

According to World Coffee Research Caturra "(...) has a single-gene mutation that causes the plant to grow smaller (called dwarfism). Its name derives from the Guarani word meaning "small. (...) Breeders were interested in Caturra’s small size, which allows plants to be placed closer together, and its closely spaced secondary branches, which enable it to produce more fruit in the same space. (...)".

In the southwest of Antioquia, within the coffee growing union; there is a variety called Caturra Chiroso, which is grown in Urrao. It has been defined as a combination of fruits, with consistent notes of jasmine, peach, lemongrass and a unique floral residual among coffees; which has given added value to this coffee and has allowed it to win in various national and international competitions. 

This Heirloom Chiroso is a wet process/sun dried cultivar from "Las Estrellas" Farm, where they use a small pulper  to remove the cherry, then fermenting with water, and later drying on a raised bed that has a top which slides on and off depending on weather.

This cultivar is complex, with delicate flavor and aromatic compounds that lend to perfumed sugar notes, and soft floral hints in the cup. The fragrance and aroma show a nice honey note  that sets things off with clean sweetness, fading into a hibiscus flower accent note. The flavor profile is bright, crisp, and clean from start to finish. The sweetness is a bit like juicy citrus and brown sugar, with some red cherry as the coffee cools, and rosehip tea. The coffee has such a clean acidic impression, adding clarity to flavor notes, and resulting in a finish that's pristine.
