Colombia - Inmaculada Fellow Farms, Striped Bourbon (Natural)

Flavor description: Stewed red fruit aromas and floral tones hint at a complex cup with loads of jammy sweetness. Light and fruity acidity, notes of berries and hibiscus with a full syrupy body.

Inmaculada Coffee Farms is a specialty coffee operation run by the Holguín family. Since their inception they have focused on cultivating rare varieties such as Laurina, Sudan Rume, Gesha, and the rare species Eugenoides, and perfecting their processing techniques which are solely naturals.

Natural processed coffees are generally risky and difficult to execute in the humid microclimates of Colombia which is why most Colombian coffees are categorized as clean washed milds. However, due to the demand for unique flavor profiles that can be achieved when it is done well, producers can often receive better prices for a high quality natural making it worth the risk.

Circa 2017 we were invited by Jimmy Holguín to visit their farms. When we had the chance to go, our enjoyment of the pure Colombian hospitality we were greeted with could only be surpassed by the amazement of their operations - most specifically the facilities where they were drying coffee to produce excellent naturals. The solar drying beds on carousels was just one of the innovations that sets them apart and has earned them recognition on a global scale. Their coffees have been used successfully by World Barista Champions in 2015 and again in 2021.

In 2022, they started their Fellow Farms program, a commitment to the coffee farmers of Huila and Cauca. They purchase cherries adding a special bonuses, encouraging effort and excellence in harvesting and traceability. They apply the same methodologies and standards with these coffees as their own to bring exceptional flavors to the cup.
